Pamela Or Suzette?
They've been around the block, (not Pamela but maybe Suzette) birthing in Brittany (France). There are numerous variations including sope (Mexico), injera (African), crespella (Italy), pannekoeken (Denmark), pfannkuchen (Germany), dosa (India), palacsinta (Hungary), filloas (Galacia, Spain) to name a few. I've had them here and there in the US, the most memorable at Lutz Cafe in Chicago.
I didn't know the savory style is traditionally made with buckwheat flour and sweet with whole wheat. Suzette prefers sweet but Pamela, neither! She stepped out on her own and made them with a mishmosh of flours so she could go either way. And let me tell you, they are great!
All kidding aside, Pamela's Gluten Free Baking and Pancake Mix makes ambrosial crepes.
I had a package sitting in my pantry. A while back I pulled it out and started reading the verbiage on the back. While I like pancakes and waffles, I never make them, not sure why. Moving to the side pane, crepes! The thought hadn't crossed my mind. Also listed were muffins, chocolate chip cookies and using it as breading. But it was the crepe idea that hooked me.
So I made them, right then, and they were uuummmmm, wonderful, kindof like getting into your car in the sun on a 100F degree day after sitting in an air conditioned office freezing your bottom off all morning.
I've made them numerous times since, most often eating them plain with nothing and in place of toast or as a snack. But try rolling scrambled eggs up in one, or spreading one with jam and fresh creamy goat cheese. And if you really want, call up Suzette!
Crepes Suzette: A sweet, lacy thin crepe usually folded and served with a sauce of sugar, orange juice and Grand Marnier. This dessert dish is finished with a pour of Brandy then lit (flambe).

Indeed Pamela's baking mix is great when you're in need of something tasty in a pinch! And as an aside, I'm happy to see gluten free posts on your blog!

I've seen Pamela's products but always wondered whether or not they tasted good. I'll definitely have to pick up a package of this and try the crepes and maybe even waffles or pancakes (I'll eat yours)! Thanks for sharing.

Yes I've tried a lot of different gluten free mixes. Gluten Free Pantry and Gluten Free Mama are also good. Have you been to Gluten Free Specialty downtown? They have a great selection.
